In 2010 at age 27, I got a very aggressive cancer. I thought I ate healthy but that was back when 6-11 carb servings were recommended (tip: not healthy!). But I loved pasta, pizza, dessert and drinking… I just didn’t eat fast food (the “healthy” part of my diet). Anyway the cancer floored me; I went thru an aggressive chemo treatment to kick it out (Burkitt’s lymphoma is a “curable” cancer) but dare I say it nearly killed me (however that was never in my mind!). Read my post Can’t Shake Cancer for more of the story and my thoughts.
I lost a ton of weight (my normal skinny 118 down to 89 bony pounds), my hair, and my strength. I could barely walk after it was all said and done. Eating was the most difficult thing to do throughout treatment because I had no appetite and nothing sounded good. When I did eat everything tasted off.
Anyways it took about 5 years to gain my energy back. I was always tired but I tried to hang in there. I became interested in learning about natural health. I saw a multitude of holistic healers to fix parts of me. My path led me to learn nutrition to become a Nutrition Therapist, and the best part was applying that nutrition with a Natural Foods Chef certification, both from NTI in Denver. When I began applying that knowledge of nutrition to my own life and changing my diet in healthy ways, that is when things started taking a turn for the better. Fast forward to now, where I’m here to help YOU get back to feeling good!
Now, I am thriving.
Because I took charge of my health.
2010: Me + Cancer = A defining point in my past, a turning point in my life.
I decided it would not conquer me, I would defeat it.
And in no way was it easy. Thinking back to what it took to get where I am now, 6 of those 7 years were very difficult and I still have rough times… Winter depression, missing out on the foods I loved, or a social night out drinking, but I feel so much better all around by not participating in the things that do not support my body’s health. It has become my #1 priority.
Personally I am doing as much as I can to avoid ever having to go there again.
You may not have had cancer. Although you probably know someone who has. It’s yucky to go through, to see it, to be part of. But in a weird messed up way, for me, it was a gift. It proved to me I was strong and that I had a lot to learn about becoming who I am. It gave me a purpose and direction. (To avoid that $hit like it’s cancer, and help anyone else who’s willing to listen to learn how to avoid it too!)
We all have our own journeys. I have also had depression (and still battle it every winter), acne as a teen, candida (what’s that? Learn more coming soon), low energy, digestive issues, painful periods. These are all things I’ve had personal experience with and can help you through to the other side.
I never cooked much. I grew up on boxed mac and cheese and Lucky Charms! Dessert was my favorite part of any meal. But now I know as good as they seemed to taste, they were nutrient deficient and the lack of nutrients is a part of what led to my ill health.
I can show you how to incorporate whole foods into your diet with prep tips, cooking techniques and using spices to flavor your dishes! I can help you improve your health by eliminating certain things from your diet that may be causing your body pain and problems.
I want to educate and empower you so cooking is not intimidating.
I want to inspire, encourage and excite you to cook real foods for you and your family.
I want to teach YOU as much as you’re open to about learning how to incorporate healthier options into your lifestyle. Not just food, but natural body and beauty products, your environment, mindfulness.
An emphasis on prevention. It’s much better than maintaining disease or recovering from it! Please, trust me!
